Milk and other dairy products provide an important source of protein, calcium and other nutrients to many people worldwide. However, raw (unpasteurized) dairy products sometimes contain bacteria and other pathogens which can sicken people. Pasteurization efficiently destroys pathogens in dairy products which make them safe to consume. Milk contains readily detectable levels of an enzyme called alkaline phosphatase. The inactivation of milk alkaline phosphatase occurs at a higher temperature threshold than the threshold for pasteurization.
